Felin Fach Griffin - Ricardo's page

The Griffin's head chef is Dutchman Ricardo Van Ede. Ricardo, 40, was the youngest chef in the Netherlands to win a Michelin Star, at the age of 21. Following this he became a culinary celebrity in his native country, appearing on Dutch TV and in newspapers nationally and internationally. He continued his training in Europe, working in three-starred Michelin restaurants such as Michel Guerard in Eugenie-les-Bains. He returned to Amsterdam to set up Ricardo Food and Wine which was voted best delicatessen in the Netherlands. Ricardo also was voted Chef of the Year in 1995 by Dutch Elle Magazine.

His first position in the UK, after moving here in 1997, was Sous Chef at Cliveden House with responsibility for the private dining rooms. Since then he has been Head Chef at the Flaneur Food Hall in London and The Black Jug in Horsham, West Sussex.

Ricardo is a supporter of the slow food movement. The area around the Brecon Beacons was declared the first ‘slow food’ region of Wales on March 1 2002, joining 560 other regions across 45 countries.

This is my first newsletter and I hope that many more will follow.
As some people maybe will already know I’m completely mad about everything to do with food and wine.
So in each newsletter I will try to update you about new and interesting things…

The first piece of good news is that Maison du Chocolat will open it's doors before Christmas in London, they produce the most amazing chocolates in the world. (45-46 Picadilly, W1)

The best cookbook buying web-sites in my opinion are all the Amazon sites .com / .co.uk / .de and .fr
They offer a great selection, great service and most of the time up to date stock.

Another great site is buchgourmet.com, a German site, (but also in English), carrying an amazing choice in many languages and usually your books will be delivered within a week. For the latest French books have a look at libairie-gourmande.fr, (if you phone them they do speak English).

If you really like wine please, please try some of the Weingut Donnhoff’s 2002 Rieslings; it is hard to find better than this in the UK. Alternatively have a look at howardripley.com (also great for top Burgundy) or bbr.com.

Is rum the new cognac?
I really do hope so. Of late you can find more and more quality aged rums. If you see one please try it…you will be amazed by the sheer beauty of its taste. One of the best places to try rum in the UK is at the hotel du vin group where they have a list with more than 40 rums. What is a rum without a Cuban cigar? If you are a quality cigar smoker have a look at cgarsltd.co.uk they carry the best cigar selection of rare and aged cigars in the world, believe me you will be pleasantly surprised.

For Burgundy lovers there is only one web-magazine you should read, burghound.com - Four times a year, only about Burgundy with lots of information and tasting notes, so forget Robert Parker and have a look at burghound.com.
