The Felin Fach Griffin - Drink

The Griffin's wine list is put together by the combined brains and palates of host, Charles Inkin, chef and unparalleled oenophile, Ricardo van Ede, and some of the country's leading independent wine suppliers. Including Richard Ballantyne (www.ballantyne.co.uk), Enotria (www.enotria.co.uk), Tom Innes of Irma Fingal Rock (www.pinotnoir.co.uk) and Simon Newson of Whirly Wine.

We try to keep the main list to a manageable choice of no more than 50 or so wines, some of which are will complement the Griffin's style of food, others which are better suited to drinking on their own before eating. The Felin Fach Griffin has a small reserve list with some finer wines. These wines represent the very best of winemaking in the New and Old Worlds: we would encourage you to try them. We will also always try and keep our list fresh, interesting and tailored to the season – this sometimes means we will have wines which are no longer on the main list and will represent terrific value. Ask us about them.

As you move on towards pudding we highly recommend trying one of our 'sticky' wines followed perhaps by a Calvados or an Armagnac.

INTRODUCTION



    The Griffin’s wine crew is skippered by Julie Bell.  Combining her experience of bringing together a balanced collection of wines with the truly exceptional and encyclopaedic oenological knowledge of Head Chef, Ricardo van Ede, makes for a fine team.  The three other members of our front of house team also have wine qualifications. 
    We patronise wine merchants who are original, dedicated and at one with what we do.  If we could point you in the direction of our favourites: Tom Innes of Monmouth’s Fingal Rock Wine (01600 712372), Earlsfield’s Astrum Winecellars (0208 870 5252) Bristol’s Nick Brooks of Vinetrail (0117 921 1770) and Nottingham’s Burgundy specialist, John Gauntley (0115 911 0555).  All are supporters of brilliant winemakers all around the world.
    We favour the smaller winemaker, driven by quality over volume, originality over banality.  Our list is ever changing, the product of weekly tastings of new wines and new vintages.  Wines must suit the seasonal nature of our food and we find that the Old World delivers on this best so that is where most our wines come from, and not just from traditional regions.  Do look at pages 8 and 11, though, for some classic New World wines by winemakers we trust.
    The merits of an organic (O on the list) or, particularly, a biodynamic (B) approach in winemaking are clearcut.  We increasingly try to source such wines which are not affected by chemicals or the introduction of artificial colours or flavours.  We want our wines to be influenced by weather, terroir and the skill and sweat of the winemaker.
    The best news is that we now offer wines by carafe (250ml and 375ml) as well as in a glass size that is sensible.  More elegant than a large glass, and more flexible than a bottle, the carafe enables us to give you far greater choice of wines with your food.   A huge step for restaurants in this country and long overdue.
